This Old-Fashioned Pineapple Casserole combines sweet pineapple chunks with a creamy, thickened topping and a crispy, cheesy crust for a comforting and nostalgic side dish that’s perfect for gatherings.

  • 40 ounces pineapple chunks
  • 1/3 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 5 tablespoons salted butter (melted)
  • 1 sleeve butter crackers (I used Townhouse, but Ritz also work!)
  • 2 cups cheddar (shredded, yellow)

Instructions

  1. Preheat Oven: Preheat oven to 350°F. Grease the casserole dish with nonstick spray.
  2. Prepare Pineapple: Open canned pineapple, and reserve only 6 tablespoons of juice. Drain the rest from each can. Pour pineapples into the bottom of a greased casserole dish.
  3. Crush Crackers and Melt Butter: Crush crackers, and melt the butter. My butter took 30 seconds to melt in the microwave. Combine the two and set aside.
  4. Make Thickened Mixture: In a small bowl, whisk the sugar, flour, and reserved pineapple juice until thick and creamy. Pour thickened mixture over the pineapples.
  5. Layer Toppings: Top pineapples with half the cheese and half the crackers. Repeat to form a double layer of cheese and cracker topping.
  6. Bake: Bake in a preheated oven for 30 minutes. Your pineapple casserole will be bubbly, and have a golden brown, crisp topping. Enjoy warm!
