This fresh and vibrant Spring Salad combines crisp mixed greens, juicy cherry tomatoes, crunchy cucumbers, and creamy avocado topped with tangy goat cheese and walnuts, dressed with a simple balsamic vinaigrette for a perfect light meal or side dish.

Salad Ingredients

  • 4 cups Mixed greens
  • 1 cup Cherry tomatoes (Sliced in half)
  • 1 cup Cucumber (Sliced)
  • 1/2 medium Red onion (Thinly sliced)
  • 1 medium Avocado (Diced)
  • 1/2 cup Walnuts (Chopped, optional for extra crunch)
  • 4 oz Goat cheese (Crumble on top)

Dressing Ingredients

  • 1/4 cup Olive oil
  • 2 tbsp Balsamic vinegar
  • to taste Salt & pepper (For seasoning)

Instructions

  1. Preparation In a large bowl, combine mixed greens, sliced cherry tomatoes, cucumber, red onion, and diced avocado.
  2. Add Goat Cheese Crumble goat cheese over the salad.
  3. Add Walnuts Sprinkle walnuts on top.
  4. Make Dressing In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper to taste.
  5. Toss Salad Drizzle the dressing over the salad and toss gently to combine.
  6. Serve Serve immediately as a side dish or main course.

Notes

  • Walnuts are optional and can be added for extra crunch.
