  • 6 g Gelatin Powder
  • 36 g Cold Water
  • 500 g Cream (35-40% fat)
  • 1 Vanilla Pod (optional)
  • 140 g Caster Sugar
  • 100 g Egg Yolks
  • Pinch of Sea Salt Flakes

Instructions

  1. Bloom Gelatin: Bloom the gelatin by soaking it in cold water and refrigerating.
  2. Heat Cream: Heat the cream with the vanilla pod until steaming.
  3. Whisk Egg Yolks: Whisk egg yolks with 10g of caster sugar until combined.
  4. Prepare Caramel: Prepare dry caramel by melting sugar in a saucepan without stirring until golden brown.
  5. Add Cream to Caramel: Gradually add hot cream to the caramel while whisking.
  6. Mix with Egg Yolks: Mix the caramel-cream mixture into the egg yolks.
  7. Cook Mixture: Cook over low heat until it reaches 84C/183F, while whisking continuously.
  8. Strain and Add Gelatin: Strain the mixture into a tall jug and stir in bloomed gelatin until dissolved.
  9. Blend and Chill: Blend for smoothness, chill for at least six hours, then whisk before serving.
