2 large eggs, separated

Instructions
In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat for 6–8 minutes until berries burst and mixture thickens slightly. Stir in cornstarch slurry if a thicker consistency is desired. Set aside to cool slightly.
In a bowl, whisk or beat together ricotta, heavy cream, and honey (if using) until light and fluffy. Refrigerate until needed.
In a large bowl, whisk together 1 cup ricotta, milk, egg yolks, and vanilla extract. In another bowl, combine flour, sugar, baking powder, and salt.
Fold the dry ingredients into the wet mixture until just combined.
In a clean bowl, beat egg whites until soft peaks form. Gently fold into the batter.
Heat a nonstick skillet over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter per pancake and cook for 2–3 minutes per side, until golden and cooked through.
Stack pancakes and top with whipped ricotta and blueberry compote. Serve immediately.

For best results, use whole-milk ricotta for richer flavor and texture.
