Toffee Chex Mix with Caramel Crunch is a delectably addictive dessert snack that combines crunchy Chex cereal and nuts coated in a rich, buttery caramel toffee. Perfect as a sweet treat for sharing or gifting, this irresistible mix features a crispy caramel brittle texture with a touch of vanilla and a balanced sweetness.

Ingredients

Scale

For the Mix

  • 6 cups Chex (Rice or Corn)
  • 1 cup Nuts (Pecan halves, walnuts, or almonds) Mix or match as desired

For the Toffee Coating

  • 1 cup Unsalted Butter (quality butter for best flavor)
  • 1 cup Brown Sugar (light or dark as per preference)
  • 1/2 cup Light Corn Syrup (honey can be a substitute)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda (for airy texture)
  • 1/2 teaspoon Fine Salt (balances sweetness)

Instructions

  1. Preheat Oven and Prepare Mix: Preheat your oven to 250°F (120°C) and line your baking sheets with parchment paper. In a large heatproof bowl, combine the Chex cereal and your choice of nuts so they’re ready for the toffee coating.
  2. Make Toffee Coating: In a medium saucepan, melt unsalted butter with brown sugar and light corn syrup over medium-high heat. Allow it to boil without stirring for about 5 minutes until it bubbles up beautifully.
  3. Add Flavorings and Texture Agent: Remove the saucepan from the heat and immediately whisk in vanilla extract, fine salt, and baking soda; watch as the mixture foams and transforms into a luscious toffee coating.
  4. Coat the Mix: Quickly pour the foaming toffee over the cereal and nuts. Fold and toss the mixture using a silicone spatula until every piece is generously coated in the shiny toffee goodness.
  5. Bake the Coated Mix: Spread the mixture evenly on your prepared baking sheets. Bake for 45 to 60 minutes, stirring every 15 minutes, until the mix is dry, light, and turning a lovely golden color.
  6. Cool and Store: Allow the toffee mix to cool completely on the baking pan for 30 to 45 minutes until set. Once cooled, break into bite-sized shards and store in an airtight container to maintain freshness.

Notes

  • Use quality unsalted butter for the best flavor in your toffee coating.
  • Stir the mix every 15 minutes during baking to ensure even coating and prevent burning.
  • Honey can be used as a substitute for light corn syrup, but the texture may slightly vary.
  • Allowing the mix to cool fully on the baking sheet is essential for a crisp, brittle texture.
  • Store in an airtight container to preserve crunchiness and prevent moisture absorption.
