Instructions
Preparation Cut the salmon into even 1 to 1.5 inch cubes.
Preparation Pat the salmon dry and season lightly with salt and pepper.
Preparation In a small bowl, whisk together the sweet chili sauce, soy sauce, minced garlic, and grated ginger.
Cooking Heat olive oil in a large nonstick skillet over medium-high heat until shimmering.
Cooking Add the salmon bites in a single layer, leaving space between pieces. Cook for 2 minutes on the first side without moving them.
Cooking Flip each bite and pour the sweet chili mixture over the salmon, spooning some of the sauce into the pan. Cook for 1 to 2 more minutes until the salmon is opaque and flakes easily.
Cooking Remove the salmon bites to a plate and sprinkle with sesame seeds and chopped green onions if using.
Preparing the Dip Whisk together the Greek yogurt, lime juice, lime zest, honey, minced garlic, salt, and pepper until smooth.
