For the Dough:
2 1/4 teaspoons active dry yeast
1cup warm water
2 1/2cups all-purpose flour
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon sugar
For the Stuffed Crust:
1cup shredded mozzarella or string cheese
For the Toppings:
1/2cup pizza sauce
1 1/2cups shredded mozzarella cheese
1/2cup pineapple chunks
1/3cup sliced jalapeños
12–15 slices pepperoni
Drizzle of ranch (optional)
Instructions
Make the Dough: In a bowl, combine yeast, warm water, and sugar. Let sit for 5 minutes until foamy. Add flour, salt, and olive oil. Mix and knead until smooth. Cover and let rise for 1 hour.
Preheat Oven: Preheat oven to 475°F (245°C).
Shape the Dough: Roll out into a rectangle or circle on a floured surface. Place mozzarella around the edges, then fold the edges over and seal to form the stuffed crust. Transfer to a greased or parchment-lined baking sheet.
Assemble the Pizza: Spread pizza sauce evenly over the dough. Add shredded cheese, then top with pepperoni, pineapple chunks, and jalapeños.
Bake: Bake for 12–15 minutes, or until crust is golden and cheese is bubbly.
Finish: Drizzle with ranch before serving if desired.
Notes
Use string cheese for an easier stuffed crust option.
Adjust jalapeños based on your spice preference.
Try adding red onion or fresh basil for extra flavor.
Dough can be made ahead and refrigerated overnight.
