Instructions
Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease it.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
In another bowl, combine sugar, oil, egg, buttermilk, vinegar, vanilla extract, and red food coloring.
Gradually add the dry ingredients to the wet mixture, stirring until smooth.
Pour the red velvet batter into the bottom of the prepared springform pan and smooth the top.
In a separate bowl, beat the cream cheese and sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition. Then add vanilla extract and sour cream, mixing until fully combined.
Pour the cheesecake batter over the red velvet layer in the pan.
Spoon dollops of strawberry jam over the cheesecake layer and swirl gently with a knife.
Bake for 50–60 minutes, or until the center is set.
Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Before serving, top with whipped cream, whole strawberries, and extra strawberry sauce if desired.
