  • 4 cups cauliflower rice (fresh or frozen, thawed and drained)
  • 1 lb ground sausage (mild or spicy Italian sausage)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, no-sugar-added
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese (about 200 g)
  • 1 small jalapeño, finely chopped (optional)
  • 2 green onions, sliced (for garnish)
  • 2 tablespoons olive oil
  • 1 teaspoon yellow mustard

Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish with olive oil or butter.
  2. Prepare Cauliflower Rice. If using fresh cauliflower, pulse florets in a food processor until rice-sized. If frozen, thaw and squeeze out excess moisture using a clean kitchen towel. Set aside.
  3. Cook Sausage. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground sausage, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through. Remove to a bowl, leaving the fat in the pan.
  4. Sauté Aromatics. Add the remaining tablespoon of olive oil to the skillet. Sauté chopped onion and garlic for 3-4 minutes until softened and fragrant.
  5. Make Chili Mixture. Return the cooked sausage to the pan. Stir in diced tomatoes, tomato paste, chili powder, cumin, paprika, mustard, salt, and pepper. Add chopped jalapeño if using. Simmer over low heat for 10 minutes, stirring occasionally, until thickened. Adjust seasoning to taste.
  6. Assemble Casserole. Spread the cauliflower rice evenly in the prepared baking dish. Pour the sausage chili mixture over the top, spreading into an even layer.
  7. Add Cheese. Sprinkle shredded cheddar cheese generously on top of the chili layer.
  8. Bake. Bake in the preheated oven for 20-25 minutes until the cheese is melted, bubbly, and slightly golden.
  9. Cool and Garnish. Remove from oven and let cool for 5 minutes. Garnish with sliced green onions before serving.

  • Use fresh or frozen cauliflower rice; if using frozen, be sure to drain excess moisture.
  • Adjust spiciness by including or omitting the jalapeño.
  • Letting the casserole cool for 5 minutes before serving helps the cheese set.
