Crust

  • 200 g graham crackers or digestive biscuits (crushed)
  • 100 g melted butter
  • 2 tbsp sugar

Cheesecake Filling

  • 600 g cream cheese (softened)
  • 3/4 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

Salted Caramel Sauce

  • 1 cup granulated sugar
  • 6 tbsp butter
  • 1/2 cup heavy cream
  • 1 tsp sea salt

Instructions

  1. Prepare the crust Preheat oven to 170°C (340°F). Mix crushed graham crackers, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes and allow to cool.
  2. Make the cheesecake filling Beat cream cheese and sugar until smooth and creamy.
  3. Add eggs Add eggs one at a time, mixing gently after each addition.
  4. Add remaining ingredients Mix in sour cream, vanilla extract, and cornstarch until smooth and fully combined.
  5. Bake the cheesecake Pour filling over the crust and bake for 45–55 minutes until the center is slightly jiggly.
  6. Cool and chill Turn off the oven and leave the cheesecake inside with the door slightly open. Refrigerate for at least 4 hours or overnight.
  7. Prepare salted caramel In a saucepan, melt sugar over medium heat until amber colored. Add butter and stir until melted. Slowly pour in heavy cream and mix until smooth. Stir in sea salt and let cool.
  8. Top the cheesecake Spread the salted caramel evenly over the chilled cheesecake.
  9. Slice and serve Cut into slices and enjoy the rich salted caramel flavor.
