Instructions

  1. Prepare the broth and vegetables: In a large pot, heat the olive oil over medium heat. Add the minced garlic, diced carrots, and celery, sautéing gently for about 3-5 minutes until they start to soften but not brown.
  2. Cook the chicken: Add the chicken breast and pour in the chicken broth. Bring the mixture to a gentle simmer, cover, and cook for 20-25 minutes or until the chicken is fully cooked and vegetables are tender.
  3. Shred the chicken: Remove the chicken breast from the pot and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.
  4. Return chicken and add lemon: Return the shredded chicken to the pot. Stir in the fresh lemon juice and season with salt and freshly ground black pepper to taste.
  5. Simmer and blend flavors: Let the soup simmer gently for another 5 minutes to allow the flavors to meld beautifully.
