Ingredients

  • 2 oz silver tequila

  • 1 oz fresh lime juice

  • 1 oz passionfruit juice or puree

  • 1 oz raspberry syrup (or muddled raspberries + simple syrup)

  • 1/2 oz agave syrup (optional, for added sweetness)

  • 1 egg white (or aquafaba for a vegan option)

  • Ice

  • Fresh raspberries, passionfruit halves, and mint for garnish

Instructions

  1. Add tequila, lime juice, passionfruit juice, raspberry syrup, agave syrup, and egg white to a shaker.

  2. Dry shake (without ice) for 20 seconds to emulsify the egg white.

  3. Add ice and shake again until the mixture is thoroughly chilled (about 20–30 seconds).

  4. Double strain into a chilled rocks glass.

  5. Allow the foam to settle, then garnish with half a passionfruit, a mint sprig, and fresh raspberries on a cocktail skewer.

  6. Serve immediately and enjoy the silky, tangy layers of fruity delight.

Notes

  • Aquafaba is a great vegan substitute for egg white, providing the same silky foam.
