Fudge Base

  • 475 g white chocolate chips
  • 397 g (1 can) sweetened condensed milk
  • ¾ to 1 tsp peppermint extract (use more for a stronger mint flavor)
  • 1 tsp vanilla bean paste
  • Pinch of fine sea salt
  • Green and turquoise food coloring

Dark Chocolate Swirl

  • 75 g dark or semi-sweet chocolate

Instructions

  1. Prepare Pan: Line an 8×8 inch square pan with parchment paper for easy removal. For thicker fudge slices, use a loaf pan instead.
  2. Melt Dark Chocolate: Warm the dark chocolate in the microwave by heating for about 1 minute, stirring well, letting it rest for a minute, then heating for another minute. Stir until completely smooth.
  3. Melt White Chocolate Mixture: Combine sweetened condensed milk and white chocolate chips in a pot. Cook over low heat, stirring frequently, until the chocolate melts fully and the mixture is smooth.
  4. Add Flavorings & Color: Turn off the heat, then stir in peppermint extract, vanilla bean paste, fine sea salt, and drops of green and turquoise food coloring. Mix until the color and flavors are evenly distributed.
  5. Assemble Fudge: Pour the white chocolate mixture into the prepared pan. Dollop the melted dark chocolate in large circles over the top.
  6. Swirl Chocolate: Using an offset spatula or toothpick, swirl the dark chocolate into the white chocolate base to create a marbled effect.
  7. Chill: Cover the pan with foil and refrigerate for about 4 hours until fully set.
  8. Slice & Store: Slice into 16 pieces using a chef’s knife. Store the fudge in an airtight container in the fridge for 2 to 3 weeks or at room temperature for up to 1 week.
