  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup pink lemonade drink mix (powdered)
  • 0.25 cup white chocolate chips (optional)

Instructions

  1. Preheat oven and prepare baking sheets. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until the mixture is light and fluffy (about 3-4 minutes).
  3. Mix in liquids and zest. Beat in the egg, lemon juice, and lemon zest until well combined.
  4. Whisk dry ingredients. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pink lemonade drink mix.
  5. Combine mixtures and add chips. Gradually add the dry mixture to the wet mixture, stirring until fully incorporated. If desired, fold in white chocolate chips for extra sweetness.
  6. Form cookies on sheets. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the bottom of a glass.
  7. Bake cookies. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked – that’s okay! They’ll continue to cook on the baking sheet after removal.
  8. Cool and dust. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring to a wire rack. Once cooled, dust with additional powdered sugar for a pretty finish.
