Peppers Gratin is a vibrant and flavorful baked dish featuring colorful bell peppers layered with olives, capers, and a crispy breadcrumb topping, perfect as a savory side or light main course.

  • 2 pounds Colorful Bell Peppers
  • 1/4 cup Olive oil
  • 34 Cloves of Garlic Chopped
  • 1/3 cup Pitted Kalamata olives
  • 1 1/2 Tablespoons Rinsed Capers

For the Topping

  • 1 cup Panko Breadcrumbs
  • Pinch of Dried Oregano
  • Salt & Pepper To Taste
  • 3 Tablespoons Olive Oil
  • 3/4 cup Shredded Mozzarella Cheese (Optional)

Instructions

  1. Preheat oven: Preheat oven to 400 degrees F.
  2. Prepare peppers: Trim and slice the peppers into strips.
  3. Coat peppers: Toss the peppers with olive oil to coat them lightly.
  4. Arrange peppers: Lay the peppers in a baking dish, arranged in a neat pattern if you like.
  5. Add toppings: Place the garlic, olives and capers on top, nestling them among the peppers in an even distribution.
  6. Mix breadcrumb topping: In a bowl, mix the breadcrumbs with the oregano, salt and peppers, then add just enough olive oil so that all the breadcrumbs are moistened, mixing well so that the breadcrumb mixture attains a sand-like texture.
  7. Sprinkle topping: Sprinkle breadcrumb mixture over the peppers evenly, so each pepper strip has at least a bit.
  8. Drizzle olive oil: Drizzle remaining olive oil over everything.
  9. Drizzle olive oil again: Drizzle remaining olive oil over everything.
  10. Add cheese (optional): If using, sprinkle the cheese on top.
  11. Bake: Bake in oven for about 30-45 minutes, or until the peppers and tender and the breadcrumbs are a golden brown.
  12. Note on edges: The edges of the pepper strips may begin to char a bit—that just adds more flavor.
  13. Serve: Serve hot, warm or at room temperature.
