Ingredients

Units Scale
  • 24 Oreo cookies (crushed)
  • 5 tablespoons unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 12 Oreo cookies, chopped
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup whipped cream or stabilized whipped topping
  • 68 whole Oreo cookies (for garnish)

Instructions

  1. Preheat oven to 325°F (160°C). Line a springform pan with parchment paper and lightly grease.
  2. For the crust, mix crushed Oreos with melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract, mixing until combined.
  4. Add eggs one at a time, mixing gently after each addition. Stir in sour cream until smooth.
  5. Fold in chopped Oreos. Pour the filling over the cooled crust and smooth the top.
  6. Bake for 50–60 minutes, or until the center is just set. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  7. Chill the cheesecake completely in the fridge for at least 4 hours or overnight.
  8. To make the ganache, heat the heavy cream until steaming. Pour over chocolate chips, let sit 1 minute, then stir until smooth.
  9. Pour ganache over the chilled cheesecake and spread evenly. Let set slightly.
  10. Pipe whipped cream around the edges and decorate with whole Oreo cookies.

Notes

  • For easier slicing, run a warm knife under hot water between cuts.
  • Use room temperature ingredients for a smoother batter.
  • Stabilized whipped cream holds better if preparing in advance.
  • Store leftovers covered in the fridge for up to 5 days.
