Olive Cheese Bread is a rich and savory appetizer made with crusty French bread topped with a creamy, cheesy olive mixture and baked until golden and bubbly. It’s perfect for parties, potlucks, or a flavorful snack.

  • 1 loaf French bread (or Italian bread), halved lengthwise
  • 1 cup black olives, sliced
  • 1 cup green olives with pimentos, sliced
  • 1/2 cup unsalted butter, softened
  • 1/2 cup mayonnaise
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 23 cloves garlic, minced
  • 2 tbsp chopped fresh parsley (plus more for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the softened butter, mayonnaise, shredded mozzarella, Parmesan cheese (if using), minced garlic, and chopped parsley. Mix until well blended and creamy.
  3. Fold in the sliced black and green olives until evenly distributed in the cheese mixture.
  4. Spread the olive-cheese mixture evenly over the cut sides of the bread halves.
  5. Place the bread halves on a parchment-lined baking sheet.
  6. Bake for 12–15 minutes, or until the cheese is melted and bubbling.
  7. For a more golden and crispy top, broil for an additional 1–2 minutes, watching carefully to prevent burning.
  8. Remove from the oven, garnish with extra chopped parsley, slice, and serve warm.

Notes

  • Use a combination of green and black olives for the best flavor balance.
  • Parmesan adds a salty, nutty kick but can be omitted for a milder taste.
  • Broiling is optional but adds a beautiful golden finish.
