  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract optional

Instructions

  1. Mix Dry Ingredients – In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Combine Wet Ingredients – In another bowl, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.
  3. Make the Batter – Pour the wet mixture into the dry ingredients. Gently stir until just combined. Do not overmix; a few lumps are fine.
  4. Cook Pancakes – Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter for each pancake.
  5. Flip & Finish – Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip and cook another 1–2 minutes until golden brown.
