Instructions

  1. Puree the Mango Peel and chop mango. Put mango in a blender. Blend until smooth and creamy.
  2. Mix Cream Cheese and Mango Add cream cheese to mango puree. Mix well until smooth and uniform.
  3. Add Powdered Sugar Add powdered sugar and vanilla. Mix until the mixture feels thick and sweet.
  4. Add Lemon Juice Add lemon juice to balance sweetness. Mix again for a bright flavor.
  5. Shape the Truffles Scoop small amounts of mixture. Roll into balls using your hands. Place on parchment paper.
  6. Chill the Truffles Put the tray in the fridge. Chill for at least 30 minutes to firm up.
  7. Melt White Chocolate Melt white chocolate in a bowl. Use a microwave or double boiler. Stir until smooth.
  8. Coat the Truffles Dip chilled truffles in melted chocolate. Let extra drip off. Place back on parchment paper.
  9. Add Coconut Coating Sprinkle desiccated coconut over coated truffles. Press gently so it sticks well.
  10. Final Chill Chill truffles for another 15 minutes. Serve cold for the best taste.
