These Mediterranean Pinwheels are a quick and easy appetizer featuring flavorful hummus, roasted red peppers, feta cheese, and fresh greens rolled inside soft tortillas, perfect for parties or light snacks.

  • 4 large tortillas
  • 8 ounces hummus
  • 4 ounces roasted red peppers (drained, chopped)
  • 1/3 cup feta cheese (crumbled)
  • 1 cup arugula
  • 1/4 cup red onion (minced)
  • 3 tablespoons parsley (chopped)

Instructions

  1. Lay out the six tortillas.
  2. Start by spreading a layer of hummus on each tortilla.
  3. Follow that by spreading the roasted red peppers, feta cheese, arugula, parsley and red onion evenly on each of the 4 tortillas.
  4. Roll the tortilla tightly for each tortilla.
  5. Use a serrated knife to cut each tortilla into about 1 inch pinwheels. Repeat for all the tortillas.
  6. Cover and refrigerate until you are ready to serve.

Notes

  • Refrigerate the pinwheels before serving to help them hold their shape and enhance flavors.
