These Manteconchas are a delightful fusion of Mexican conchas and soft sweet bread, baked in cupcake form for easy serving. They feature a tender, buttery dough topped with a colorful, crumbly concha topping, making them as fun to eat as they are to look at. Perfect for breakfast, dessert, or a sweet snack!

Ingredients

For the Dough:

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/2 cup warm milk (110°F)
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter (softened)

For the Concha Topping:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • Food coloring (pink, yellow, blue, chocolate, or any desired colors)
  • 2 tbsp cocoa powder (for chocolate topping)

Instructions

Prepare the Dough:

  1. Activate Yeast: Dissolve yeast in warm milk and let it sit for 5-10 minutes until foamy.
  2. Mix Ingredients: In a large bowl, combine flour, sugar, and salt. Add eggs, vanilla, and softened butter. Pour in the yeast mixture.
  3. Knead: Knead the dough for 8-10 minutes until smooth and elastic. Cover and let rise for 1-2 hours until doubled in size.

Make the Topping:

  1. Cream Butter & Sugar: In a bowl, mix butter and powdered sugar until smooth.
  2. Add Flour & Flavoring: Stir in flour and vanilla to form a thick dough.
  3. Color the Topping: Divide into portions and mix each with food coloring. For chocolate topping, add cocoa powder.

Assemble the Manteconchas:

  1. Prepare Muffin Tin: Line a muffin tin with cupcake liners.
  2. Shape the Dough: Divide the risen dough into 12-14 small balls and place them in the liners.
  3. Top with Concha Design: Roll out the topping, place over each dough ball, and gently press down. Use a knife to score the traditional concha pattern.

Bake & Enjoy:

  1. Preheat Oven: Set to 350°F (175°C).
  2. Bake: Bake for 18-20 minutes until golden and set.
  3. Cool & Serve: Let them cool before serving. Enjoy with coffee or hot chocolate!

Notes

  • To speed up rising, place the dough in a warm oven (turned off) with a bowl of hot water.
  • Store at room temperature in an airtight container for up to 3 days.
