  • 1.5 cups Plain Greek yogurt (full-fat recommended)
  • 1/4 cup Powdered sugar (or to taste)
  • 1 tbsp Lemon zest (from 1 large lemon)
  • 2 tbsp Fresh lemon juice
  • 1/2 tsp Vanilla extract (optional)
  • 1 cup Fresh raspberries (gently mashed or chopped)

Instructions

  1. Prepare Baking Sheet Line a small baking sheet with parchment paper.
  2. Mix Yogurt Base In a medium mixing bowl, combine the Greek yogurt, powdered sugar, lemon zest, fresh lemon juice, and vanilla extract (if using). Whisk until smooth and well combined. Taste and adjust sweetness or lemon tang if desired.
  3. Add Raspberries Gently fold in about 3/4 cup of the mashed or chopped raspberries. Be careful not to overmix, as the color will bleed significantly.
  4. Scoop Bites Using a small cookie scoop (about 1 tbsp size) or two spoons, drop small dollops of the yogurt mixture onto the prepared baking sheet, leaving a little space between each bite.
  5. Garnish (Optional) If desired, gently press a small piece of the remaining 1/4 cup fresh raspberries into the top of each yogurt bite for an extra pop of color and flavor.
  6. Freeze Place the baking sheet in the freezer for at least 2-3 hours, or until the bites are completely solid.
  7. Store Once frozen, carefully peel the Lemon Raspberry Frozen Yogurt Bites off the parchment paper. Transfer them to an airtight freezer-safe container.
