Instructions

  1. Preheat Oven. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugar. In a large bowl, cream the butter and sugar together until light and fluffy; this takes about 2‑3 minutes.
  3. Add Eggs and Flavorings. Add the eggs one at a time, then stir in the lemon zest, lemon juice, and vanilla until fully incorporated.
  4. Mix Dry Ingredients. Sift together flour, baking powder, and salt; fold into the wet mixture just until combined. The dough will be slightly sticky.
  5. Chill Dough. Cover the bowl and chill the dough for 15 minutes. Meanwhile, place extra granulated sugar in a shallow bowl.
