  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons minced garlic
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • pinch of kosher salt
  • pinch of ground black pepper

For the Dressing

  • 3/4 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • pinch of kosher salt
  • pinch of ground black pepper

For the Salad

  • 4 cups romaine lettuce, chopped
  • 1 cup slivered almonds
  • 1 1/2 cups blueberries

Instructions

  1. Prepare the dressing: Combine Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar. Shake until smooth and set aside.
  2. Marinate the chicken: Marinate the chicken in a mixture of soy sauce, olive oil, garlic, lemon juice, lemon zest, salt, and pepper for at least 30 minutes.

  4. Assemble the salad: In serving bowls, layer romaine lettuce topped with sliced grilled chicken, slivered almonds, blueberries, and drizzle generously with the honey mustard dressing.

Notes

  • Marinate the chicken for at least 30 minutes to enhance flavor.
  • Let the grilled chicken rest for 5 minutes before slicing to keep it juicy.
  • You can substitute soy sauce with tamari or coconut aminos for gluten-free options.
  • Use dairy-free yogurt to make the dressing vegan-friendly.
