Ingredients

  • 1 pound ground beef or turkey (Can be substituted with lentils or chicken.)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell pepper, chopped
  • 2 cans diced tomatoes (14.5 oz each)
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 2 tablespoons chili powder (Adjust spice level as desired.)
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 green onions, chopped

Instructions

  1. Cooking Heat a large pot over medium heat. Add the ground meat along with the chopped onion and minced garlic. Cook until the meat is browned and thoroughly cooked, then drain any excess fat.
  2. Cook peppers Add the chopped bell pepper to the pot. Sauté for an additional 2-3 minutes until the pepper softens.
  3. Add ingredients Pour in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir until well combined.
  4. Simmer Bring the mixture to a simmer and lower the heat. Cover the pot and let it cook for at least 30 minutes, stirring occasionally to prevent sticking.
  5. Serve Serve the chili hot, garnished with your choice of toppings.
