Ingredients

Units Scale

Cake

  • 2 tablespoons Earl Grey Tea (loose leaf or 2 tea bags)
  • 2 tablespoons Culinary Lavender (fresher buds yield better flavor)
  • 2 cups All-purpose Flour (measure accurately)
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter (room temperature)
  • 1.5 cups Granulated Sugar
  • 3 large Eggs (room temperature)
  • 1 tablespoon Vanilla Bean Paste (or vanilla extract)
  • 1 cup Buttermilk (or a quick version using whole milk with lemon juice)

Milk Soak

  • 1 cup Whole Milk
  • 1 can Sweetened Condensed Milk

Frosting

  • 2 tablespoons Culinary Lavender (for blending with butter)
  • 8 ounces Cream Cheese (at room temperature)
  • 3 cups Powdered Sugar (adjust for desired consistency)
  • a few drops Purple Food Coloring (optional)

Instructions

  1. Preparation Preheat your oven to 350°F (175°C) and prepare a 9×9 inch light metal baking pan by lightly greasing it.
  2. Blend dry ingredients Blend Earl Grey tea and culinary lavender until finely ground. Whisk this blend with all-purpose flour, baking powder, baking soda, and salt in a large bowl.
  3. Cake batter In a separate bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy, about 2 minutes.
  4. Add eggs and mix Add in the eggs one at a time, mixing until smooth after each addition. Gradually incorporate the buttermilk and the dry ingredients until just combined—don’t overmix!
  5. Bake cake Pour the batter into your prepared pan and bake for 38-44 minutes. A toothpick should come out clean when inserted in the center. Cool for 30 minutes before removing from the pan.
  6. Milk soak preparation In a saucepan, heat the whole milk and steep with Earl Grey tea and lavender for 15 minutes. Strain the mixture to remove solids.
  7. Milk soak mix Mix the warm milk with sweetened condensed milk and vanilla bean paste, ensuring everything is well combined.
  8. Frosting preparation Blend culinary lavender with butter until fluffy, then gradually mix in cream cheese. Add powdered sugar to achieve desired frosting consistency.
  9. Assembly Trim the top of the cooled cake to create a flat surface. Poke holes over the top, then slowly pour the milk soak over the entire cake. Frost with the lavender cream cheese frosting.
  10. Garnish Optional: Sprinkle some extra crushed lavender on top for a beautiful garnish!

  • Measure all-purpose flour accurately for best results.
  • Fresher culinary lavender buds yield better flavor.
  • Do not overmix the batter to keep the cake tender.

  • Optional purple food coloring adds a lovely pastel hue to the frosting.
