4 slices sandwich bread
2 large eggs
2 tbsp butter
4 slices bacon
Salt & pepper, to taste
Fresh parsley or chives, for garnish
Instructions
Use a heart-shaped cookie cutter to cut the centers out of 2 slices of bread. Reserve the cutout hearts for toasting.
In a skillet, cook bacon over medium heat until crispy. Transfer to a paper towel-lined plate and set aside.
In the same skillet, melt butter. Place the bread slices with heart cutouts into the pan.
Crack one egg into each heart-shaped hole. Season with salt and pepper. Cook until the egg is set on the bottom and whites are mostly firm, about 3–4 minutes.
For over-easy eggs, flip carefully and cook another 1–2 minutes. For sunny-side up, cover with a lid to steam until tops are just set.
Toast the reserved heart-shaped cutouts in the skillet until golden on both sides.
Plate egg-in-a-basket with toasted hearts and crispy bacon. Garnish with chopped parsley or chives. Serve warm.
Notes
Use brioche or sourdough for a richer texture and flavor.
Add shredded cheese on top of the eggs for extra indulgence.
For a sweet twist, skip the eggs and fill the heart cutouts with Nutella or fruit jam.
