  • 12 oz Linguine or Fettuccine (the perfect canvas for our luscious sauce)
  • 2 Live Lobsters (about 1.5 lbs each)
  • 1 lb Pre-cooked Lobster Meat (about 2 cups, optional)
  • 2 tbsp Olive Oil (to get our aromatics perfectly golden)
  • 4 tbsp Unsalted Butter (divided)
  • 1 small Shallot (finely chopped)
  • 2 cloves Garlic (minced)
  • 1/2 cup White Wine (to deglaze the pan)
  • 1 cup Heavy Cream (to create a velvety sauce)
  • 1/2 cup Parmesan Cheese (grated finely)
  • 1/4 tsp Dried Thyme (an earthy herb)
  • 2 sprigs Fresh Tarragon (chopped)
  • pinch Red Pepper Flakes (optional)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper (freshly ground)
  • 1/4 cup Fresh Parsley (chopped)
  • 1 tsp Lemon Zest (to lift the dish)
  • 1 tbsp Lemon Juice (for balance)

Instructions

  1. How to Make Gourmet Creamy Lobster Pasta
    Prepare your lobster: If using live lobster, boil for 8-10 minutes until bright red. Cool, then chop into bite-sized pieces. If using pre-cooked, simply chop it.
  2. Cook the pasta
    Boil linguine or fettuccine in salted water until perfectly al dente, about 8-10 minutes. Reserve about a cup of the starchy pasta water before draining.
  3. Sauté aromatics
    In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add chopped shallots and minced garlic, cooking until fragrant and softened.
  4. Deglaze pan
    Pour in the white wine and scrape up any browned bits from the bottom of the skillet, letting it simmer for a minute.
  5. Simmer sauce
    Stir in the heavy cream, grated Parmesan cheese, thyme, tarragon, salt, and pepper. Cook gently, stirring, until the sauce is smooth and slightly thickened.
  6. Combine pasta
    Add the drained pasta directly to the skillet with the sauce. Toss everything together until the pasta is well coated.
  7. Add lobster
    Gently fold in the prepared lobster meat, the remaining 2 tablespoons of butter, lemon juice, and lemon zest. Warm through for 2-3 minutes, being careful not to boil.
  8. Serve immediately
    Plate the pasta, garnishing generously with fresh chopped parsley and extra grated Parmesan cheese.
