This Fluffy Greek Yogurt Jello is a light, creamy dessert combining sugar-free raspberry gelatin with full-fat Greek yogurt for a delightful treat topped with fresh raspberries.

Ingredients

  • 0.3 ounce Sugar-free raspberry Jello (one package)
  • 1 cup Filtered water
  • 1 cup Full-fat Greek yogurt (room temp!)
  • Fresh raspberries (to garnish)
  • 1/4 cup Collagen powder
  • 1/4 cup Vanilla protein powder

Instructions

  1. Heat Water: Heat 1 cup Filtered water until it reaches the boiling point. Make sure you don’t leave it to boil, because it will evaporate and you’ll end up with less.
  2. Dissolve Jello and Collagen: Pour the boiling water over the 0.3 ounce Sugar-free raspberry Jello gelatin and ¼ cup Collagen powder (if using).
  3. Whisk Mixture: Whisk by hand until fully dissolved. Allow it to cool down on the counter.
  4. Add Yogurt: Once the jello mixture is room temp, add the 1 cup Full-fat Greek yogurt (must be room temp as well or it may curdle!) and whisk until completely smooth.
  5. Add Protein Powder: If adding ¼ cup Vanilla protein powder, this is when you will add it and whisk again. It will be bubbly at first. Allow it to sit for 5 minutes for the bubbles to disappear.
  6. Refrigerate: Pour the jello-yogurt mixture into 4 small serving cups. Refrigerate for at least 2 hours, or until set.
  7. Garnish and Serve: Garnish with Fresh raspberries and enjoy!

Notes

  • Make sure the Greek yogurt is at room temperature to avoid curdling.
  • Do not allow water to boil extensively to prevent evaporation.
  • Allow bubbles to disappear before refrigerating for best texture.
