Delicate puff pastry shells filled with smooth vanilla custard and topped with fresh mixed berries — a perfect balance of creamy, crisp, and fruity. These elegant berry custard pastries are ideal for brunches, tea parties, or light dessert trays.
For the Pastry:
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
1 tbsp granulated sugar (for sprinkling)
For the Custard Filling:
1 cup whole milk
2 egg yolks
1/4 cup granulated sugar
1 tbsp cornstarch
1/2 tsp vanilla extract
Pinch of salt
For the Topping:
1/2 cup fresh raspberries
1/2 cup fresh blueberries
1/2 cup fresh strawberries, sliced
Optional: powdered sugar for dusting, fresh mint for garnish
Make the Pastry Shells:
Preheat oven to 375°F (190°C). Cut puff pastry into 6 squares. Score a smaller square inside each, avoiding cutting all the way through.
Brush with egg wash and sprinkle with sugar. Bake for 15–18 minutes until golden and puffed. Let cool, then gently press down the center to create a well.
Make the Custard:
Heat milk in a saucepan until steaming. In a bowl, whisk yolks, sugar, cornstarch, and salt. Slowly whisk in the hot milk.
Return to heat and cook, stirring constantly, until thickened. Stir in vanilla. Chill until ready to use.
Assemble:
Fill cooled pastry centers with chilled custard. Top with fresh berries and dust with powdered sugar. Garnish with mint if desired.
