Golden, crispy tater tots baked over layers of fluffy eggs, savory sausage, and melted cheese—this easy breakfast casserole is the ultimate comfort food, ideal for feeding a crowd, meal prepping, or lazy weekend mornings.

  • 1 (32 oz) bag frozen tater tots
  • 1 lb breakfast sausage (pork or turkey), cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • ¾ cup milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Spread the cooked and crumbled sausage evenly in the bottom of the dish.
  3. Sprinkle both cheeses over the sausage layer.
  4. In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until fully combined.
  5. Pour the egg mixture evenly over the sausage and cheese.
  6. Arrange frozen tater tots in a single layer over the top of the casserole.
  7. Bake uncovered for 40–45 minutes, or until the eggs are set and the tater tots are golden and crispy.
  8. Let rest for 5–10 minutes before serving. Garnish with green onions or parsley if desired.
