These Easter M&M Cookies are colorful, fun, and perfect for celebrating the season with a sweet treat studded with white chocolate chips and pastel M&Ms.

1/2cup butter (melted)
1 3/4cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/2cup light brown sugar
1/2cup white sugar
1 large egg
1 teaspoon vanilla extract
1/2cup white chocolate chips
1/2cup pastel M&Ms for the dough (+ more for decorating on top)
Instructions
Preheat oven: Preheat oven to 350 degrees. Line baking sheets with parchment paper.
Melt butter: Melt butter and let cool for 5 minutes.
Sift dry ingredients: Sift flour, baking soda, baking powder, and salt into a bowl. Set aside.
Mix wet ingredients: Mix melted butter and sugars together in a separate bowl. Stir in the egg and vanilla.
Combine: Combine wet and dry ingredients and stir. Mix in white chocolate chips and pastel M&Ms.
Scoop cookies: Scoop using a medium cookie scoop onto ungreased or parchment paper-lined baking sheets.
Bake: Bake cookies for 10-12 minutes. While cookies bake, cut a handful of M&Ms in half using a sharp knife. These will be bunny ears.
Decorate: Once the cookies come out of the oven press bunny ears into the hot cookie right next to any M&Ms that are sticking out of the cookie. If you don’t see a lot of visible M&Ms go ahead and press some into the hot cookies then add the M&M halves for ears.
Cool: Let cookies cool on the pan for 5 minutes before transferring them to a wire cooling rack.
Notes
Let melted butter cool before mixing to prevent cooking the egg.
