  • 14 ounces coconut milk from a can
  • 2 teaspoons fish sauce
  • 2 teaspoons sugar
  • 1 pound frozen dumplings (such as potstickers or wontons)
  • 1 cup spinach, chopped
  • 2 green onions, sliced
  • 1 tablespoon cilantro leaves, chopped
  • 1 lime

  • Chile oil or chili crisp

Instructions

  1. Heat the oil and sauté aromatics. In a large pot, heat the oil over medium heat. Add the diced onion, chopped garlic, ginger, and lemongrass. Cook until fragrant and the onions are translucent.
  2. Add the curry paste. Stir in the Thai red curry paste and cook for a minute to release the flavors.
  3. Add liquids and seasonings. Pour in the chicken broth and coconut milk. Stir in the fish sauce and sugar. Bring the mixture to a simmer.
  4. Cook the dumplings. Add the frozen dumplings to the simmering soup. Cook according to package instructions until they float and are cooked through.
