Ingredients

  • 8 boneless, skin-on chicken thighs

  • 1 tablespoon plain yogurt

  • 2 teaspoons lemon juice

  • 1 tablespoon ground cumin

  • 1/2 teaspoon cinnamon

  • Salt and pepper to taste

Instructions

  1. On the day before cooking, marinate the chicken thighs with yogurt, lemon juice, cumin, cinnamon, salt, and pepper. Cover and refrigerate overnight.

  2. Preheat the oven to 400°F (200°C).

  3. Line a baking sheet with foil and parchment paper.

  4. Arrange the marinated chicken thighs in a single layer, skin side up, on the prepared baking sheet.

  5. Roast for 30 minutes, or until the chicken is cooked through and the skin is golden and crispy.
