Instructions

  1. Slice and salt cucumbers: Slice the cucumbers very thinly using a handheld mandoline for best results. Place the cucumber slices in a colander or sieve, sprinkle with a pinch of salt, gently mix, and let them drain for 20-30 minutes to remove excess moisture.
  2. Prepare cream cheese mixture: Using a hand mixer, blend the cream cheese and mayonnaise in a small bowl until smooth. Fold in the chopped fresh dill, chives, garlic powder, and season with salt and black pepper to taste.
  3. Butter and spread bread: Thinly butter each slice of bread to prevent sogginess. Then spread a layer of the cream cheese mixture evenly over the buttered side. For cleaner sandwich slices, consider freezing the bread briefly before assembling.
  4. Assemble sandwiches: Drain and pat dry the cucumber slices. Thinly layer the cucumbers over half of the bread slices. Add additional fresh herbs or microgreens if desired, and sprinkle lightly with salt and black pepper.
  5. Complete and cut sandwiches: Top with the remaining bread slices, press gently, then remove crusts using a serrated knife. Slice each sandwich into either three finger-sized rectangles or triangle-shaped pieces for serving.
