Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 yellow bell pepper, chopped
  • 1/4 cup black olives (Kalamata preferred)
  • 1/3 cup feta cheese, cut into cubes
  • 1 cup crisp lettuce leaves (such as romaine or butter)
  • 1 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar or lemon juice
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large salad bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, olives, and lettuce.
  2. Add feta cubes on top.
  3. Drizzle with olive oil and red wine vinegar or lemon juice.
  4. Sprinkle with dried oregano, salt, and pepper.
  5. Toss gently and serve immediately.
