These elegant chocolate-covered stuffed dates are a naturally sweet, no-bake treat with a chewy center filled with nut butter or nuts, enrobed in rich chocolate and topped with rose petals, pistachios, or crushed nuts. Beautifully presented and bursting with texture, they make for a perfect guilt-free dessert or giftable treat.

Ingredients

  • 20 Medjool dates, pitted
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup chopped walnuts or roasted almonds (optional for crunch)
  • 200g dark chocolate, melted
  • 100g white chocolate or ruby chocolate (optional, for drizzling)
  • 2 tbsp crushed pistachios
  • 2 tbsp crushed hazelnuts or almonds
  • 2 tbsp dried edible rose petals

Instructions

  1. Prep the Dates: Carefully slice each date lengthwise without cutting all the way through. Remove the pit.
  2. Stuff: Fill each date with about 1 tsp of almond butter (or nut of choice). If using whole nuts, add one or two inside for crunch.
  3. Dip in Chocolate: Melt dark chocolate in a double boiler or microwave in short bursts. Dip each stuffed date into the chocolate, coating halfway or fully, and place on a parchment-lined tray.
  4. Decorate: While still wet, drizzle with melted white or ruby chocolate. Sprinkle with crushed pistachios, nuts, or rose petals. Mix and match for variety and color.
  5. Chill: Refrigerate for 15–20 minutes until chocolate is set. Serve or box for gifting!

  • For a firmer filling, chill nut butter before stuffing.
