2–3 tbsp milk

Instructions
Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan thoroughly.
Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Mix sugars and oil: In a large bowl, mix the vegetable oil with granulated sugar and brown sugar until smooth.
Add eggs and vanilla: Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
Fold in carrots and pineapple: Fold in the grated carrots and crushed pineapple.
Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in nuts if using.
Pour batter: Pour the batter into the prepared bundt pan and smooth the top.
Bake: Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan: Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
Make glaze: To make the glaze, whisk together softened cream cheese, powdered sugar, milk, and vanilla until smooth and pourable.
Glaze the cake: Drizzle the glaze over the cooled cake before serving.
