  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan thoroughly.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Mix sugars and oil: In a large bowl, mix the vegetable oil with granulated sugar and brown sugar until smooth.
  4. Add eggs and vanilla: Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  5. Fold in carrots and pineapple: Fold in the grated carrots and crushed pineapple.
  6. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in nuts if using.
  7. Pour batter: Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake: Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in pan: Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  10. Make glaze: To make the glaze, whisk together softened cream cheese, powdered sugar, milk, and vanilla until smooth and pourable.
  11. Glaze the cake: Drizzle the glaze over the cooled cake before serving.

Notes

  • Using crushed pineapple adds moisture and a subtle sweetness to the cake.
  • Chopped walnuts or pecans are optional but add nice texture and flavor.
  • Ensure the cake is completely cool before glazing to prevent the glaze from melting.
