15.25 ounce box yellow cake mix
2 large eggs
1/2cup vegetable oil
1cup creamy peanut butter
Instructions
Preheat Oven: Preheat the oven to 350 degrees F. Line two cookie sheets with parchment paper.
Mix Base Ingredients: In a stand mixer bowl or large bowl, add the 15.25 ounce box yellow cake mix, 2 large eggs, and ½ cup vegetable oil. Beat in the stand mixer or with a hand mixer on medium speed until completely combined.
Add Peanut Butter: Add in the 1 cup creamy peanut butter. Beat until well incorporated into the dough.
Scoop Dough: Using a 2-tablespoon cookie scoop, scoop the cookie dough out and roll it into a ball using your hands.
Flatten Cookies: Using a fork, gently press down to flatten the top of the ball. Form a “+” or crisscross pattern with the fork. If the cookie dough sticks to the fork, dip the fork in granulated sugar and then press down into the cookie balls.
Arrange on Sheet: Place each cookie 1 inch apart on the prepared baking sheet.
Bake: Place in the heated oven and bake for 12-15 minutes or until the bottom edges are golden.
Cool: Allow to cool for 5 minutes on the baking sheet and then transfer to a cooling rack or paper towels to cool completely.
Store: Store in an airtight container at room temperature for up to 4 to 5 days.
Notes
If the cookie dough sticks to the fork while making the crisscross pattern, dip the fork in granulated sugar before pressing down.
Allow cookies to cool completely on a cooling rack for best texture.
