  • 15.25 ounce box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup creamy peanut butter

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F. Line two cookie sheets with parchment paper.
  2. Mix Base Ingredients: In a stand mixer bowl or large bowl, add the 15.25 ounce box yellow cake mix, 2 large eggs, and ½ cup vegetable oil. Beat in the stand mixer or with a hand mixer on medium speed until completely combined.
  3. Add Peanut Butter: Add in the 1 cup creamy peanut butter. Beat until well incorporated into the dough.
  4. Scoop Dough: Using a 2-tablespoon cookie scoop, scoop the cookie dough out and roll it into a ball using your hands.
  5. Flatten Cookies: Using a fork, gently press down to flatten the top of the ball. Form a “+” or crisscross pattern with the fork. If the cookie dough sticks to the fork, dip the fork in granulated sugar and then press down into the cookie balls.
  6. Arrange on Sheet: Place each cookie 1 inch apart on the prepared baking sheet.
  7. Bake: Place in the heated oven and bake for 12-15 minutes or until the bottom edges are golden.
  8. Cool: Allow to cool for 5 minutes on the baking sheet and then transfer to a cooling rack or paper towels to cool completely.
  9. Store: Store in an airtight container at room temperature for up to 4 to 5 days.

  • If the cookie dough sticks to the fork while making the crisscross pattern, dip the fork in granulated sugar before pressing down.
