These Brownie Mix Cookies combine the rich, fudgy flavor of brownies with the convenience and texture of cookies, resulting in a gooey, chocolatey treat perfect for any occasion.

Ingredients

Units Scale

Ingredients

  • 18.3 ounce box Brownie Mix (I used Betty Crocker)
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup butter (melted)
  • 1 tablespoon chocolate syrup
  • 1 teaspoon vanilla extract
  • 1 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat Oven: Preheat the oven to 375 degrees F and line 2 cookie sheets with parchment paper.
  2. Combine Dry Ingredients: In a medium mixing bowl, add the 18.3 ounce box Brownie Mix and 1/4 cup all-purpose flour. Stir until combined.
  3. Add Wet Ingredients: Add the 2 large eggs, melted 1/4 cup butter, 1 tablespoon chocolate syrup, and 1 teaspoon vanilla extract. Mix well with a spatula or hand mixer if preferred.
  4. Add Chocolate Chips: Add the 1 cup mini semi-sweet chocolate chips and stir until evenly distributed.
  5. Scoop Dough: Using a 2 tablespoon cookie scoop, scoop the cookie dough balls and place about 2 inches apart on the prepared cookie sheet.
  6. Bake: Place in the preheated oven and bake for 8 to 10 minutes. For a gooey center, the edges of the cookie will look set and the center may still look soft and slightly darker than the edges. For a not so gooey center, bake an additional minute or two until the center is the same color as the edges.
  7. Cool on Sheet: Remove the cookies from the oven and let cool completely on the cookie sheet if you opted for the gooey center, or 10 minutes if you went with a less gooey option.
  8. Transfer to Rack: Place on a paper towel or cooling rack to cool completely.
  9. Store: Place in an airtight container and store at room temperature.

Notes

  • For a gooey center, let the cookies cool completely on the cookie sheet.
  • For a less gooey center, bake a minute or two longer and cool for 10 minutes on the sheet before transferring.
