A rich and creamy no-bake dessert with layers of coffee-soaked Biscoff cookies, mascarpone cream, and indulgent Biscoff spread.

Ingredients

  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup Biscoff spread
  • 20 Biscoff cookies (crushed)
  • 1/2 cup brewed coffee (cooled)
  • Extra Biscoff crumbs (for garnish)
  • Caramel drizzle (optional)

Instructions

  1. In a bowl, whip heavy cream, mascarpone cheese, sugar, and vanilla extract until smooth and fluffy.
  2. Dip Biscoff cookies in cooled coffee and place a layer at the bottom of a serving glass or dish.
  3. Add a layer of the mascarpone mixture over the cookies.
  4. Repeat the layers until the glass is filled.
  5. Warm the Biscoff spread slightly and pipe or drizzle it on top.
  6. Sprinkle extra crushed Biscoff cookies for garnish and drizzle with caramel if desired.
  7. Cover and chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a stronger coffee flavor, add a splash of coffee liqueur to the brewed coffee.
  • Serve in small jars or glasses for an elegant presentation.
  • This dessert can be made ahead and stored in the fridge overnight for even better flavor.
