A classic British comfort dish featuring juicy sausages served over creamy mashed potatoes, topped with a rich onion gravy. Perfect for a cozy, hearty meal!

For the Sausages & Mash:

  • 6 pork sausages (bangers)
  • 1 tbsp olive oil
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 4 tbsp unsalted butter
  • Salt and black pepper to taste

For the Onion Gravy:

 

  • 1 tbsp butter
  • 1 large onion, thinly sliced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Sausages:

    • Heat olive oil in a skillet over medium heat.
    • Cook sausages for 10-12 minutes, turning occasionally, until browned and cooked through. Set aside.
  2. Prepare the Mashed Potatoes:

    • Boil potatoes in salted water until fork-tender (about 15 minutes).
    • Drain, then mash with butter, milk, salt, and pepper until smooth.
  3. Make the Onion Gravy:

    • In the same skillet, melt butter and sauté onions for 5-7 minutes until caramelized.
    • Stir in flour and cook for 1 minute.
    • Gradually pour in beef broth and red wine (if using), stirring constantly until thickened.
    • Add Worcestershire sauce, salt, and pepper. Simmer for 5 minutes.
  4. Assemble the Dish:

    • Plate the mashed potatoes, top with sausages, and drizzle with onion gravy.
    • Garnish with fresh parsley and serve warm.

Notes

  • Sausage Options: Traditional British pork sausages work best, but you can use any high-quality sausages you prefer.
  • Gravy Variations: If skipping the wine, replace it with extra beef broth for a milder flavor.
  • Make-Ahead: The mashed potatoes and gravy can be prepared ahead and reheated before serving.
