Ingredients

Scale

Bacon and Seasoning

  • 1 pack thick-cut bacon
  • 1/4 cup brown sugar
  • 1/2 tablespoon water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes (optional)

Crostini

  • 1 baguette
  • Olive oil (for brushing)
  • Salt and pepper (to taste)

Cheese and Topping

  • 4 or 8-ounce log goat cheese
  • Maple syrup, honey, or hot honey (for drizzling)

Instructions

  1. Preheat and Prepare Bacon Mixture: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper. In a small bowl, combine the brown sugar, black pepper, cayenne pepper, and water to create the seasoning mixture.
  2. Coat and Bake Bacon: Lay the bacon slices out on the prepared baking sheet in a single layer. Rub both sides of each bacon slice with the brown sugar seasoning mixture. Optionally, sprinkle red pepper flakes over the bacon for extra heat. Bake the bacon for 15 minutes, then flip each slice carefully and continue baking for an additional 10 to 15 minutes until the bacon is crispy but not burnt.
  3. Drain and Cool Bacon: Remove the bacon from the oven and transfer the slices onto a paper towel-lined plate to drain excess grease and cool completely.
  4. Prepare Crostini: Increase the oven temperature to 425°F (220°C). Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet. Brush each slice lightly with olive oil and season with salt and pepper. Bake the crostini for 7 to 10 minutes, flipping halfway through, until they turn golden brown and crispy. Remove from oven and let cool.
  5. Assemble the Bacon Goat Cheese Log: Once the bacon has cooled, crumble it into small pieces. Place the goat cheese log on a serving plate and press the bacon pieces evenly into the surface of the cheese.
  6. Finish with Drizzle and Serve: Drizzle maple syrup, honey, or hot honey over the bacon-covered goat cheese log. Serve immediately alongside the crispy crostini for spreading and dipping.

Notes

  • Substitute goat cheese with cream cheese, ricotta, or Brie for a different flavor profile.
  • For added heat, use spicy honey or increase the amount of cayenne pepper in the bacon mixture.
  • The candied bacon can be prepared ahead and stored in an airtight container in the refrigerator for up to 3 days.
  • To avoid flipping the bacon while baking, use a wire baking rack placed on the sheet pan.
  • Store leftover crostini in an airtight container for up to 3 days to maintain crispness.
