A crispy, cheesy low-carb alternative to classic tater tots, these cauliflower bites are loaded with smoky bacon, sharp cheddar, and a touch of green onion—perfect for dipping and sharing!

Ingredients

  • 2 cups cauliflower, finely riced and steamed
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, finely chopped
  • 4 slices cooked bacon, crumbled
  • 1/4 cup almond flour (or breadcrumbs)
  • 1 egg, lightly beaten
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or olive oil for baking

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place steamed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large mixing bowl, combine the cauliflower, cheddar cheese, Parmesan, green onions, bacon, almond flour, egg, garlic powder, salt, and pepper. Mix until well incorporated.
  4. Scoop about 1 tablespoon of the mixture and shape into small tater tot-sized cylinders.
  5. Place tots on the prepared baking sheet and lightly spray or brush with olive oil.
  6. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  7. Serve hot with ketchup, ranch, or your favorite dipping sauce.

Notes

  • Make sure to remove as much moisture from the cauliflower as possible for crispier tots.
  • These can be made ahead and frozen before baking.
  • Try different cheeses or spices to customize the flavor.
