6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white vinegar (optional)
Salt and pepper to taste
2 slices bacon, cooked until crispy and finely chopped
Smoked paprika, for garnish (optional)
Chives or green onions, chopped (optional garnish)
Instructions
Place eggs in a saucepan and cover with water. Bring to a boil, then cover, remove from heat, and let sit for 10-12 minutes.
Transfer eggs to an ice bath to cool. Peel the eggs once cooled.
Slice eggs in half lengthwise and remove yolks to a bowl.
Mash yolks with a fork and mix in mayonnaise, Dijon mustard, vinegar (if using), salt, and pepper.
Stir in the crispy chopped bacon, reserving a little for garnish if desired.
Spoon or pipe the yolk mixture back into the egg white halves.
Top with remaining bacon, a sprinkle of smoked paprika, and chopped chives or green onions if using.
Serve immediately or chill until ready to serve.
Notes
Use very fresh eggs for easier peeling after boiling.
You can prepare the filling ahead of time and assemble just before serving.
Try adding a splash of hot sauce or a dash of garlic powder for extra flavor.
