Ingredients

Units Scale
  • 1/2 cup fresh orange juice
  • 2 tablespoons orange zest
  • 1/4 cup olive oil
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons soy sauce (or coconut aminos for a gluten-free option)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional for spice)

Instructions

  • Prepare the Marinade: In a bowl, whisk together orange juice, orange zest, olive oil, honey, soy sauce, Dijon mustard, apple cider vinegar, garlic, ginger, smoked paprika, coriander, salt, black pepper, and red pepper flakes.
  • Marinate the Chicken: Place chicken breasts or thighs in a resealable bag or shallow dish and pour the marinade over them.
  • Refrigerate: Seal and refrigerate for at least 30 minutes (or up to 6 hours for deeper flavor).
  • Cook the Chicken: Remove chicken from the marinade and grill, bake, or pan-sear until fully cooked (internal temperature: 165°F / 75°C).
  • Serve & Enjoy: Garnish with fresh orange slices and chopped cilantro for extra flavor.

Notes

  • For a thicker glaze, simmer the leftover marinade for 5 minutes before drizzling over cooked chicken.
  • Swap chicken for shrimp, salmon, or tofu for a different protein option.
  • Add a splash of sriracha or chili paste for a spicier kick.
