Sweetened naturally and featuring fat-free Greek yogurt, this baked treat delivers all the cheesecake vibes without the SmartPoints—perfect for those following Weight Watchers or anyone craving a light, healthy dessert.

Ingredients

For the Cheesecake:

  • 3 cups fat-free plain Greek yogurt

  • 1 (1 oz) package sugar-free, fat-free instant cheesecake pudding mix

  • 3 large eggs

  • 1 tsp vanilla extract

  • Optional: 1-2 tbsp erythritol or monk fruit sweetener (for extra sweetness)

Optional Crust (adds SmartPoints):

  • 3/4 cup graham cracker crumbs

  • 2 tbsp light butter, melted

For Serving:

  • Fresh berries (raspberries, blueberries, blackberries, etc.)

Instructions

  1. Preheat Oven:
    Set oven to 350°F (175°C).

  2. Optional Crust:
    If using a crust, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan. Pre-bake for 8 minutes and set aside to cool.

  3. Mix Cheesecake Filling:
    In a large bowl, whisk together Greek yogurt, cheesecake pudding mix, eggs, vanilla extract, and optional sweetener until smooth.

  4. Bake:
    Pour the mixture into the prepared pan (over crust if using). Bake for 35–40 minutes until the center is just set but still slightly jiggly.

  5. Chill:
    Let cool completely, then refrigerate for at least 4 hours or overnight for best texture.

  6. Serve:
    Top with fresh berries before serving.
