Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, mix granulated sugar, brown sugar, melted butter, peanut butter, eggs, and vanilla until smooth.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Fold in the chopped peanut butter cups.
Shape the dough into a 12-inch log and place it on the prepared baking sheet.
Bake for 25 minutes, then remove from the oven and let cool for 10 minutes.
Slice into ¾-inch thick pieces and arrange them cut-side down on the baking sheet.
Bake for another 10-12 minutes, flipping halfway through, until crisp and golden.
Drizzle with melted white chocolate and let set before serving.
