Crunchy peanut butter biscotti infused with mini peanut butter cups and drizzled with creamy white chocolate—a decadent treat perfect for pairing with coffee or tea!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mini peanut butter cups, chopped

 

  • 4 oz white chocolate, melted (for drizzling)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, mix granulated sugar, brown sugar, melted butter, peanut butter, eggs, and vanilla until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • Fold in the chopped peanut butter cups.
  • Shape the dough into a 12-inch log and place it on the prepared baking sheet.
  • Bake for 25 minutes, then remove from the oven and let cool for 10 minutes.
  • Slice into ¾-inch thick pieces and arrange them cut-side down on the baking sheet.
  • Bake for another 10-12 minutes, flipping halfway through, until crisp and golden.

 

  • Drizzle with melted white chocolate and let set before serving.

Notes

  • Let the biscotti cool completely before storing in an airtight container to maintain crispness.
  • For an extra indulgent twist, dip one end of the biscotti in white chocolate instead of drizzling.
