Instructions

  1. Prepare Gelatin: In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it bloom for about 5 minutes until fully absorbed and spongy.
  2. Heat Cream Mixture: In a saucepan, combine the heavy cream, 1/2 cup sugar, and vanilla extract. Warm the mixture over medium heat, stirring occasionally, until it is hot but not boiling and the sugar has dissolved.
  3. Incorporate Gelatin: Remove the cream mixture from heat. Stir the bloomed gelatin into the warm cream until it fully dissolves, making sure the mixture is smooth and even.
  4. Chill the Dessert: Pour the cream-gelatin mixture into individual molds or ramekins. Refrigerate for at least 4 hours, or until the dessert is fully set and firm to the touch.
  5. Prepare Berry Sauce: While the cream base sets, combine the mixed berries, 2 tablespoons sugar, and 1 tablespoon water in a small saucepan. Warm over low heat, stirring gently until the berries soften and release their juices but do not break down completely, about 3-5 minutes. Remove from the heat and let cool to just warm.
  6. Serve: Once the cream base is set, unmold the dessert by dipping the molds briefly in warm water and inverting onto serving plates. Spoon the warm mixed berry sauce over or around the dessert and serve immediately chilled with a contrast of warm berries.
