Warm & Creamy Frijoles Puercos is a bold, spicy, and satisfying Mexican bean dip perfect for winter gatherings. This recipe combines tender pinto beans, smoky chipotle peppers, rich pork chorizo, crispy bacon, melted cheese, and tangy pickled jalapeños to create a creamy and flavorful dish that can be served as a comforting dip or a hearty side.

Ingredients

Scale

Beans & Peppers

  • 4 cups cooked pinto beans with liquid (215 oz cans)
  • 2 chipotle chiles with adobo sauce

Meat & Cheese

  • 1 lb pork chorizo
  • 4 slices bacon diced
  • 8 oz shredded Pepper Jack, Queso Oaxaca, or Chihuahua cheese

Other

  • ¼ cup pickled jalapeños diced

Instructions

  1. Cook the bacon: In a large skillet over medium heat, add the diced bacon and cook until it is rendered and almost crisp, releasing flavorful fat.
  2. Cook the chorizo: Add the pork chorizo to the skillet with the bacon and break it up using the back of a spoon. Cook until the chorizo is well browned and almost crispy, absorbing some of the bacon fat.
  3. Puree the beans and chiles: In a blender or using an immersion blender, puree the cooked pinto beans together with the chipotle chiles and their adobo sauce until smooth and creamy.
  4. Combine bean puree and cooked meat: Pour the smooth bean mixture into the skillet with the cooked bacon and chorizo, stirring well to combine all the flavors thoroughly.
  5. Add cheese and jalapeños: Stir in the shredded cheese and diced pickled jalapeños, then reduce the heat to low and let the mixture simmer gently for about five minutes until the cheese is melted and the dip is hot and creamy.
  6. Serve: Serve your warm and creamy Frijoles Puercos hot alongside tortilla chips as a flavorful bean dip, or use it as a hearty side dish with your favorite main courses.

Notes

  • You can substitute chipotle chiles with chipotle powder if unavailable for a milder smoky flavor.
  • Adjust the amount of pickled jalapeños based on your spice preference.
  • This dish can be reheated gently on the stovetop to maintain creaminess without drying out.
  • Use any Melty Mexican cheese such as Queso Chihuahua or Oaxaca for best results.
  • Serve warm for the best texture and flavor experience.
